             One thing that's really annoying is when I order a salad, and I get like two leaves of iceberg lettuce topped with a slice of tomato. Pathetic!
To actually be happy and content with my meals I decided I had to introduce my Quinoa Mango Salsa SUPER Salad, to the local Mexican place over here. It's jam-packed with tonnes of goodies!
First of all it's not just Iceberg lettuce, which can get a bit boring, but the base of the salad consists of spinach, cabbage, iceberg lettuce, carrots and malunggay. Malunggay, also called 
moringa, is the local super food here and has lots of calcium, potassium and vitamin C. On top of that goes the quinoa and kidney beans for fiber and protein to really fill you up. The icing on the cake is a mango adding a sweet twist and salsa for a bit of spice. Now didn't I say it was a Super Salad?
QUINOA MANGO SALSA SUPER SALAD RECIPE
 
 
Base, Serves 8
1 head of Iceberg lettuce, chopped in medium size chunks
1 head of cabbage, chopped in medium size chunks
1-pound of spinach, torn into bite-size pieces
2 carrots, grated
 
Toppings, per Salad
1/2 cup of cooked quinoa, mixed with pepper and dressing
1/2 cup of kidney beans
1/2 cup salsa
1 mango
 
Dressing, Mix to Taste
virgin olive oil
balsamic vinegar
basil
 

  This is such an awesome salad. I like to drink some coconut  water with it. Yum!
